Car back on the road (Well almost 1 problem.....)

Well my 83 z28 is finally all back together after replacing most of the gaskets and some other new minor stuff and is finally back to running great. My only problem left is that I do not think my fan is turning on at all. The fan is just a single and I have a connector coming from the drivers side with 2 wires (one is blue and the other is black i think) connected to the plug on the fan. I am not sure if I have the fan switch wire right though I have a long blue wire going down to I believe is what is my knock sensor down by the starter and A smaller plug with what looks like a dark color wire going to the plug that is right by my oil dipstick and the passenger side. I did have my car running to normal yesterday but only to about 220 but the fan still never came on. I also have tried turning on the A/c but I pulled the a/c while working on the car and all I put back in is the condensor so the belts would run correctly.

Do I have to get the whole a/c back in to get the fan going or is the engine at 220 still not at the point for the fan to come on...

Other info

83 z28 used to be 305 crossfire converted to a carbed 350 with th350 tranny.
