white exhaust valves

I pulled my 1983 lg4 today, when I look at the exhaust valves tru the manifold holes they look white. the other side of the motor the valves have a little black carbon build up. What causes a exhaust valve to look white?

It's the other way around. You should be asking why the other side has black carbon build-up.
