Overheating, starnge loads and timing issues

Axle/Gears: 3.73 10bolt GM
Overheating, starnge loads and timing issues

so car is '87 305 TPI Camo, we have replaced engine (block with heads and cam) to 88' (it was 305 TBI) and put 350TPI injectors but ECM is still stock. Also AIR system and EGR were removed. After fixing some wiring issues i still recieve three problems but there are no error codes:

1. engine recieves some strange load when idling, it jumps back and forth in area of 600 to 1200 RPM (jums are irregular), it does smoothly and there is no difference whether engine is cold or hot.

2. timing - this might be a reason why car is overheating, when car is very hot (aprox 240 degrees) headers start to glow really hard and car looses all the power, this means that timing is beeing retarded alot but i can't find any reason why this heppens

3. heating - we have checked water pump, radiator, all the hoses but found nothing, even with removed thermostat car gets hihg temperatures, and form engine startup one of radiator fans start to work and never stops, maybe this is because problem with timing but have no idea how to chceck that

i'll be appreciative of any suggestions what to check to fix any of these problems as i'm out of ideas

i wasn't enought clear, it was TPI and it is still TPI (ECM also), we just took TBI block with internals and heads
