what oil to use in my 383 stroker?
I have a 383 stroker motor that I consistly run WOT up to ~6k RPM.
Motor specs
2.02 1.6 valves
Roller tipped rockers
Double valve springs
ARP headbolts
H-beam rods
SCAT crank
.250 domed pistons, 11:1 compression
Heads ported, gasket matched, etc. The intake is also gasket matched.
Holly 780 Carb, Edelbrock Performer RPM Manifold, electric Fuel Pump
... now my question. What motor oil should I be using?

What do you know about it? Rear main seal type? Block casting number? That may give a hint, but the only real way to know is to look at the lifters. If you trust the person that built it, you could ask.
A "safe" oil to use would be a 5W-30 or 10W-30 that is rated for both diesel and gasoline engines. The diesel rating needs to be API CI-4+ and gasoline rating API SL. These oils will have the ZDDP anti-wear additive needed to protect flat tappet lifters. This is what I used in my flat tappet engines http://www.amsoil.com/storefront/hdd.aspx .
What you want to avoid are oils with API CJ-4 or SM ratings, or ILSAC GF-4. These oils have reduced ZDDP for emissions equipment protection purposes. Older engines like ours don't have that issue, but flat tappet lifters need that ZDDP. If your engine happens to have roller lifters, the CI-4+/SL oil will still be fine.
