checking head gaskets with engine on engine stand

can you check head gaskets to make sure they arent bad with the engine out of the car? im asking because im buying a 305 from a friend of mine and all we know is that it has roughly 110k on it, im replacing the rear seals and stuff like that but if i dont have to i dont want to replace the head gaskets

so is there a way you can check this?
