Center bolt guy switching to perimeter bolt covers

I just got some heads that are drilled for both center bolt and perimeter bolt covers. I want some taller covers so I think I'm going to get some perimeter bolt covers. I looked in the summit catalog to order some bolts for my new covers. They have studs and bolts, some are for aluminum covers, some for steel. What are the differences between studs and bolts? All I want is a set of fasteners to hold the suckers down. And why does the material the cover is made of affect the type fastener itself?

You can use the stud and nut combo or a bolt(your preference). Aluminum covers usually have thicker flanges therefore the need for longer bolts/studs.
