Remove:

Front and rear bumpers (under the plastic)
Remove A/C
Remove interior except driver seat
Remove back seat
Remove power accessories (locks, mirrors, windows)
Remove crash bars from doors
Remove stereo system
Move battery to the trunk.
Remove front sway bar
Convert to manual steering.
Remove TA ground skirts and put a base/Formula front and rear end on it

These are just some of the things you can do. All that should be good for maybe 200lbs.

Scrape out monkey schit (caulking) - weighs a lot.

Remove everything soluble and dip car in acid - remember the Penski (spelling?) camaros - they were so over dipped that they had to put vinyl roofs on some of them to cover up the mess.

Put driver on diet.

to build on kevins:
carpet
seats
headliner
the sound proof crap under carpet and glue, pretty hefty
dash
drag rims
exhaust
AL heads
plastic hatch window (glass=heeeavy)
plastic or webbed windows
plastic windshield
lights
fibreglass hood
And if your goin very hardcore you can find spots you dont need so much support in and drill holes
hmmmm i guess thats all I can think of for now

The only thing with going the cheap way (stripping it and not using fiberglass) is that all the wieght you strip, you'll be replacing with, tying the frame together, roll cage, fire ext., traction devices, etc. It's pretty tough to do unless you lighten the body panels and drill alot of holes.
