What happens when air tube on cat is disconnected?

I just noticed it was disconnected. I've been logging runs on the scanner and making FP and timing adjustments for the last couple of days. What would it affect?

Also, does 11.3 injector PW at WOT sound reasonable for my setup? I'm running the stock injectors. The AFR is always at 11.73 WOT.

I don't think it will affect anything your computer sees/reads. I may be wrong, but I think the idea is to pump air into the converter when the car is decelerating to reduce "bad" emissions out the tail pipe. My 81 Z and 83 Z have the small pipes going to the converter rusted out (who knows how long ago) but it never shows up as a trouble code on the computer.

wont affect performance, only thing is emission gas will go up (maybe)

nox will go up.air isinjected into the cat to help the cats operation by adding extra oxygen it helps the cat burnoff the unused fuel that collected in the exhaust cycle.it shouldn't affect anything since your o2 sensor is before the cat and doesn't read what's going on in there
