Dyno tune, or slap in and pray

Ok so I have a bored 350 thats blueprinted to 500hp, awesome... now the question comes down to should i have the engine tuned outside of the car or bolt it in and go for a chassis dyno? Im pretty certain it wouldnt last long on a stock tune (for base line until tuned) with 12:1 compression, Brodix IK200 heads, and all the other goodies, I figure it will be WAY to lean. If anyone has any ideas what direction i should take on this project the advice would be much appreciated! (Shouldnt have taken over someone else's half finished project with out a plan)
