I was talking to a transmission guy and he said that if I used a stock torque converter with my set-up, my tranny would burn up eventually. Is that true?

Assuming it is at least partially true, what stall range should I aim for? And does anyone know how to figure if a tranny is 27 or 30 spline?? ID numbers or something?

Any info regarding these would be awesome.
