New Clutch, high bite

Engine: Carb. H.O. 305
Transmission: 5 spd
New Clutch, high bite
Hi all! Have a 1985 HO Trans Am with a T5. Recently the clutch disintegrated and I replaced the clutch, pressure plate, bearing, and fork.
The brand-new clutch grabs great but doesn't bite until about 7/8ths of the way up the pedal travel. Even with the old worn clutch, it would at least grab around 3/4ths of the way up.
I've heard about people using spacers to adjust the bite point because of the hydraulic clutch but I am not sure how to do this. Could I get some advice on anything I could do with this issue?
I'm worried this will cause big issues down the line when the clutch starts wearing out a bit.

An 82 has a mechanical clutch. Climb under the car and adjust it to where you want it. 82-83 have the old school setup, not the hydraulic/self adjusting ones.
