How much is it bouncing?

My tach was doing the same thing, 3-500 rpms. I replaced my spark plug wires with a higher quality 8mm set, I had el cheapo stock replacement 7mm wires installed. Now the tach is nice and steady. I guess the cheap wires were leaking and interfering with the tach signal from the coil.

200 - 300 rpm, enough to make me look into fixing it

If it is doing it while your driving then it is probably the coil mine was doing it and when i changed the coil it was fine. If it is doing it at idle it might be the spark plug wires.

Mine started doing that and the alt was going bad, make sure you have enough power for everything.
