I have the same problem- my fan only comes on when I turn on the A/C...
with most cars, you turn on the HEATER and it draws the heat out of the engine. With our cars, when you turn on the A/C, the fan kicks in. On my car- a 91 V6- the fan SHOULD turn on when the temp switch tells it to, but the switch is malfunctioning, so I have to turn on the A/C.
Get a Chilton's manual or the like and find the fan temp switch- it should be located on one of the heads and replace it. That should do the trick.
Before that, I would get the car started and see if the fan comes on when you turn on the A/C... if it doesn't, then your fan is the problem.

i told you, if you got buy a new motor for $20 that will take care off the problem, if it doesnt work still, you can always return it if money is any issue. to hot wire it, i only know one way and its kind of dangerous, becuase my wires have gotten really hot and melted at the fuse box, so i wouldnt suggest doing this i would try getting a new motor and seeing if it works first.
to hot wire the fan you need a switch thats at least 30amp and has 2 terminals on the bottom. get a nice thick wire and run it from one end of swithc to a power source on you fuse box, then run the other wire all the way up to the plug that goes in to you fan.(the hot wire on the fan plug) and then ground the other wire that comes out of the fan plug. basically what i did with the fan plug was take off the plug and cut the two wires so the plug was free, then i just hooked up the new wires.
do all this stuff:
1. check fluid
2. check radiator (clogged, holes, cracks)
3. check hoses (upper lower)
4. check t-stat (replace if not good)
5. fan (obvisouly doesnt work)
6. completley flush the coolant system
7. get new fan motor and hot wire it
8. if still is over heating replace water pump.
