Transmission: 700r4....not stock either
Axle/Gears: 3.73
need wiring diagram or something

I'm having some serious issues "with my starter". I've replaced the ignition switch, the vats relay in the kick panel, and the starter/solenoid. Is there something somewhere else that I'm missing?? I'm showing no voltage in the wire that goes to the solenoid a lot of times or it'll show about 5 volts sometimes. Every once in a while, it'll hit and spin over and fire right up. You can jump the terminals on the solenoid and it'll crank no problem, too. Please give me some ideas!

Sounds like a loose terminal or if the solenoid gets it voltage/current through a relay, than a relay problem.
