I have a 88 Firebird v6 with a electric speedo (120mph), Could I use one a V8 140mph Speedo in it?

yup, i only believe the tachs are different. The speedos all work off a pulse signal which is not affected by yht engine size.
Only speedo difference would be if the speedo is pre86, then ints mechanical where your 88 is electric

You will need to swap over 2 parts from your old cluster... The tach and the odometer. Other than that, the cluster just plugs in.

Unless you want to contact the state and get a sticker reporting the actual mileage of the car...
Besides, swapping the odometer is easy enough... Pull the needle, pull out 8 screws and pull the motor out, swap the main assembly, put the motor in, put the screws back in, and put it in the cluster. I think you may need Torx bits for this though.
