Carb V6 - hesitation every time second barrel opens

Ok... I've fixed and replaced every little thing on this old 83 2.8.

Doesn't leak a drop, idles great, runs out awesome all the way to redline.

Honestly pretty happy about it, except for one thing...

I can't step on the go fast pedal, at ANY RPM, without a half second of hit the wall / pulled the plug power loss. Quickly after, it rockets up to speed!

What part of the carb is part of that action? Accellerator pump? I'm not good with carbs... let alone this weird varijet one!

Anyone have ideas?

(all of this is a bit tongue in cheek... the car has 100hp and isn't, by any means... fast )
