1984 Camaro Problem
I have a 1984 Camaro, well maintained to what I can see, it only has 8570 miles in total on it, but I have been trying to fix a problem in it. When you drive it, it seems to sputter a bit when you get to certain speeds, and as you drive the car, it will sputter less in the lower speeds when you try to accelerate past that speed. Example: I turn out onto a road after I just started it I can drive till like 25 or 35 MPH and it will begin to sputter for a minute if I try to pass that speed until it warms up, and it does that at different speeds, up until around 55. If I try to pass that speed before it wants to it will shut off. I changed the fuel pump thinking it was possibly not getting enough fuel, but that has not fixed the problem so I am completely stumped.

With such low miles, it's a candidate for bad gas and maybe a sludged up fuel system. Was it sitting for long prior to when this problem started?
I understand you already replaced the pump though. I'm not familiar with the carbureted cars so it's hard for me to think of much to suggest.
Does downshifting help?
Not sure what collection of sensors the carbed cars have, but see if there's ways to test them. For example, a coolant temp sensor can be tested by measuring the ohms of resistance between it's terminals. The resistance indicates the temperature and can be matched up to a chart. But I'm used to the MPFI 2.8s so I don't know how applicable this is.

Are you sure it hasn't rolled the ODO over? Not saying it's not accurate, just not common to find them with such low mileage.
Anyway, my guess is that the whole fuel system needs a good clean out. Possibly a carb rebuild due to sitting for long periods of time, normal deterioration, etc. You could have parts in the carb sticking, not allowing proper amount of fuel delivery. I'd start there. Tip: if you're not familiar with carburetors, have someone rebuild it, you'll likely end up with your situation worse than it was before. They're very finicky and if you don't know what you're doing with them, you can go from running rough to not running at all. Then end up having to pay someone to do it for you all over again.
