So yesterday I picked up a 1989 Firebird with a 2.8 V6. There are some parts missing such as the alternator (already have a new one). Now I feel like I am still missing more parts. I just need an outside perspective from yall, and maybe make a quick parts list?

Mike. Missing parts? What was given to me in a box for the car.
All those parts are the brackets the hold the alternator to the block. Not sure why the P.O. took them off but they will need to be bolted back on the front of the engine. Look up serpentine belt in the how to section. Might be a diagram there for you.
It's minor, but it looks like your heater control valve is broken and you are missing the hose that goes onto the water pump nipple
It's gonna become pretty major as soon as that engine turns over and starts shooting coolant everywhere!
How long has this car been sitting? If it's over 1 year, I'd use a hand pump to siphon as much fuel as possible out of the tank, and replace it with 5 gallons of fresh. If it's more like 5 years, then the valves could be stuck and you might want to pop the valve covers off and give each rocker arm a whack to make sure they return. Of course, if you pop the valve cover off, you should clean the gasket channel and replace the gaskets with nice fel-pro silicon gaskets.
Check each plug wire, make sure they're still bendy and connected. If they're brittle or have any sort of breaks, replace them immediately. I usually go ahead and replace spark plugs, plug wires, cap, and rotor regardless of condition because it's pretty cheap and easy to do, but that can wait until you've gotten the engine running assuming the plug wires aren't dangerous.
Check for smoke, smells, noises, when you hook up the battery for the first time. Be ready to disconnect it if you get smoke, for sure. Check oil and coolant levels, note where they're at as it might help diagnosis later. Check brake fluid and transmission fluid if you're gonna try and drive it.
