Pull the front bumper cover off & remove the bumper support bar &plastic honeycomb. Fab up a tubular cover support, to keep the front from caving in at higher speeds, from the air pressure.
Fiberglass lift-off hood (our fenders are so thin, fiberglass won't save you much, if any, to justify the cost of them)
Carpeting
Remove anymore of the dash assembly than needed to hold gauges
Fiberglass doors w/lexan windows
Front skinny wheels & tires
Inner fender liners
Remove non-needed wiring (and anything else!)
And that is just a quick short list to start with.

For a race weight, remove everything not required for speed or safety. It's hard to go into details about exactly what can be removed but if you don't need it for the track, take it off.
Now if you want to keep it street legal, there's a lot of stuff that you need to keep but there's also a lot of heavy stuff that can be removed.
My gutted out race car with a full cage and a BBC has a 3042 pound race weight. Car, driver, fuel etc sitting on the start line. It gets expensive to make it lighter and I seem to keep adding stuff back in. If I wanted it to be really light, I'd go with a full tube chassis.

Re: how can my bird go on a diet?
Well it depends how far you want to go? Is this a race only car or a street car. For a race care sure strip out the interior and eveything but a drivers seat and basic guages. for a street car might not be suce a good idea to remove things like the buper support and honey comb. Things i would look into eather way are fiberglass body panles, aluminum heads or maby and aluminum motor like the ls1? Aluminum radiator remove the hood struts and trunk struts. Raceing seats. Concider eather removeing the spare tire or replaceing it with one of the aliminum ones. lexan windows if legal in your state. Light weight wheels. Also light weight flywheel and drive shaft they claim 10 lbs of rotational weight is worth 100 lbs of dead weight. tubular k member. Maby remove the sway bars. sound deadening material. concider emmissions stuff like the air system and cat. maby swap to a smaller leight weight battery and move it to the trunk for better weight distrobution. swap to manual steering and ditch the power steering. swap to headers and lose the cast iron boat anchors theres alot of things you can do while still remaining a good daily driver with a stock appearance just depends how far you want to go.
