I assume you're including the heads in 'just top-end'.
Take the heads to your local machine shop and get the works.
Buy an intake gasket kit from your local parts store.
Have someone media blast your intake pieces.
This is a good time to port/polish your intake.
Check your pushrods for any gunk buildup inside them. A pressure washer with a very small fitting and an air compressor to remove the remaining water will work well. Or you can just buy new pushrods. Verify the pushrods are straight by rolling each one on a table with your hand that is known to be flat(check it with a straightedge first).
Clean your valve covers. Media blaster would be good.
While you're there, could always have the intake and valve covers powdercoated or painted. It sucks rebuilding something and no one knowing the difference when you're done.

you can get all of the gaskets from carquest. I got mine w/o head gaskets for around $50.
