You might check Hawk's (as you mentioned) and also YearOne, as well as Classic Industries. They seem to have quite a bit of stuff for thirds, although I haven't been overly-impressed with the selection (then again, I'm going for a completely stock Concours-quality restoration). Hawk's has a good selection of seat covers from what I've seen and heard, and covers will be what you'll need anyway since our cars came with them originally. The alternative will be seats from a newer f-body because you won't find brand-new seats for our cars anymore.
If you're going back to a mostly-stock appearance, you're really doing yourself a disservice by not checking out Dave Staubli's site at http://members.***.net/iroczdave1/
The man simply ROCKS when it comes to getting his hands on f-body parts; I've bought a mint t-top storage bag w/zipper and GM logo ($70 shipped, and all I have to do is re-dye the nylon straps) and a perfect dash shell for $270 shipped. He went through 5 boneyards and 30 Camaros to find the perfect dash.
I don't have any suggestions on what to tell you for the rest, although I'd appreciate a heads-up if you find any info on replacement brake and fuel lines since mine will also be replaced

I think that the later thirds ('91, '92) got better noise reduction due to improvements at body seams and other joining surfaces. I also think that this may have resulted in a stiffer structure, although I can't confirm either of these contentions - I'm basing them on my minimal reading here on the boards. Regardless, I don't see why you couldn't install enough aftermarket suspension toys to stiffen things up nicely.
Concerning the engine, my guess (and that's all it is) is that it won't matter what third you get for the transplant; it would likely be easier if the recipient was originally computer-controlled, but this certainly doesn't have to be the case. Anything can be done with enough time and money.
The transmission may be a different story in terms of modification - I know that there is slight modification required to switch from an auto to, say, a T56 but I do not know if any modification is required for replacing a manual with a slushbox. Why not hook that bad boy up with a 6-speed, though?
I don't know about aftermarket dashes and clusters. I'd do a search and see what comes up, but my guess is that you'll either have to fab your own or have someone do it for you. You can get gauge overlays to mod your current setup, however, but you already knew that.
I'm not really saying much here, but I hope I'm giving you some ideas and/or pointing you in the right direction.
