prepping the hood of car

Hello. I am getting ready to prep the hood. The paint is chipping everywhere. I want to sand off all the paint and the primer to bare metal. I see that people use 80 grit for this. After I get down to the bare metal, do I degrease then apply metal ready etc.?
And how many layers of primer should I put down? I have read where some people put 2-3 layers. After the primer, do I sand it down and with what grit at that point? I am not painting it at this time, so it will remain in primer. It is inside. Would appreciate any expert opinion on the exact steps that should be used for this job. Also should I be wearing a mask, because of possible fumes or smell from paint? I have read that some people do and some do not. Again thanks.
