Anyone try those? Noticable difference?
Read somewhere they're just stock S10 calipers, but not sure if that's true or what year if it is.

Those look a lot like the stock calipers on my old 1999 S10.

Master cyl vs slave cyl diameter is EXACTLY the same thing as leverage.
A larger slave cyl, such as a caliper, will provide more clamping force, at the expense of requiring more fluid, and therefore, longer stroke of the master cyl. Just exactly as, a longer breaker bar, will provide more torque, at the expense of having to move the handle farther.
Which means of course, yes your brakes may potentially bite harder; but your pedal will DEFINITELY be softer and lower. And in turn your pedal might reach the floor before your brakes bite AT ALL.
As far as the specific parts in question, I have not mix-matched them. I speak only in generalities.
Given my experience with these cars (only 30-some years now, still a n00b) it's not a path I would choose to go down. I remain open to learning something new, but this doesn't look to me like there's any surprises or gems of "undiscovered knowledge" hidden in it anywhere. I'm not seeing opportunities to rewrite the laws of physics or anything dramatic like that.
