Is 750 too much for a 350?

I am in the final stages of planning my engine, I will start construction in around 2 months. One thing that has been bothering me is the carb. I know I am getting a holley carb, but how many CFM should I get. I have been told that for a nicely built 350, (300+ hp), a holley 600 would be just fine. If so, what is the purpose of putting a 750 on. Is that overcarbing? Thanks

I have a 750 on mine and it's great. I have great throttle response from idle all the way 5500(I think the exhaust is slowing me down or it'd keep pulling). The 750 just leaves room for improvement.

Picking the proper camshaft is much more improtant then picking a carb IMO. You can't go wrong with a 750cfm carb, but a 600cfm may limit you a little if you go with a long duration cam. Something around a 262 duration isn't that much, but I prefer a 750...
