new carb tuning

I recently swapped a carbureted 350 in place of a crossfire injected 305. I have an automatic trans, 2.73s and a holley 670 street avenger on an old edelbrock performer intake. I have never tuned a carb or even worked on a car before my engine swap, and am completely new to all of this. What do I need to do to get my carb optimized? It starts right up every time, and seems to run well. When I get on it (not full throttle cuz im still breaking in the engine) it feels like it runs strong until like 3.5K and then kicks in really strong until i let off the throttle. Is this the secondaries kicking in? Is that what it is supposed to feel like? What tools will I need to tune and diagnose my new carburetor? Thanks for all your help
