can i rebuild my CC Quadrajet as a non-cc?

and yes, i know its better to stay cc but i'm getting a new motor, (and dizzy :P) and i want to go all mechanical..

No, definitely not. You can not run an electronic CCC carb without the mixture control solenoid. The needles will be popped up and full rich. You will make no power and get about 5 mpg.

You can get an M4ME quadrajet on ebay or from a junkyard. It will have the TPS plug, but no mix solenoid plug on top. This will allow you to keep your torque converter clutch functional, but the carb mixture adjustments would be all manual.

However, the CCC carbs are easy to work with. If you can't work with the CCC carb, the mechanical carb is not going to be any easier to deal with. The mechanical quadrajets were so emissions laden that they give you very little room to trim the fuel mixture. The CCC carb, on the other hand, gives you a ton of adjustment.

More often than not, people who end up hacking off their CCC setups end up with just as poor, if not worse running, hybrid setups.
