There is a tech article linked from the thirdgen.org homepage about switching from EFI to carb. It is only a start, as it doesn't have wire detail.
Getting a factory shop manual might be your best choice for getting the wiring diagram. I've also seen the wiring diagrams at the local public library, believe it or not.
