750 Demon vs 600 holley

Engine: 355 Phase 2 Bowtie heads
Transmission: 700r4
Axle/Gears: 342
750 Demon vs 600 holley
I had a 600 Holley and I put in a small performance kit.( brass floats etc).
I replaced it with a Demon 750 double pumper.
Anyways, my car seems to rev slower since i swapped it out.
My brothers SS MONTE and my IROC were neck and neck with the 600 Holley. Now with the Demon he beats me by 1.5 cars lenghts.
Could it be the tuning, timing? i'm at a lost.
Does anyone have a Demon? are they junk?

What's the engine combo? The "750" rating on the Demons is a bit misleading if you are comparing it to a Holley. The Demon is probably closer to an 800. I have a 750 Mighty Demon on my 350 and it runs well (11.89@116). It is pretty far from a stock 350.
