Question about Hayden Fan switch

Question about Hayden Fan switch

Well I got the Hayden adjustable fan relay kit from Pep Boys, Part number 3647. I was reading the instructions and they seem like a breeze to install, and I plan on wiring up a toggle switch to have a manual fan(s) turn on as well. I've got a couple questions though, and yes I did search but didn't find what I was looking for. First off, for you guys that own this kit, when exactly does the fan turn off? I know it's adjustable from like 90*-210* to turn ON, but when is it set to turn off? The instructions don't say. Also, I have a 91Z with a 350 TPI, couple of mods, dual fans, a 180* stat, and live in FL where, right now, it's cold as ***** (to me at least) in the morning but warms to about 60* by the middle of the day. what would be a good temperature to set the fan relay at to come on? 195*? 180*? Is it a bad idea to set the fan turn on lower than the t-stat rating...like if I were to set mine at 170* with a 180* stat? Help me out here.
