Stock fan blade designs? what gives?

Ok, I've posted on running warm with a/c on and replaced everything is system for cooling it seems. A/C condensor(bent fins), radiator , thermostat to a 160, hi flow water pump and the fan motor. Still would have run hot if I left the a/c on.

Well I recently went to u-pull-it yard and seen a fan assembly on a 89 rs and purchased it. It had only five blades on it, the one I have or had in it was a "S" type blade assy. with 6 blades in it. So I said what the heck and changed to the 5 bladed fan and now in the middle of the day going to work with a/c on max I cant get it to go over 215 degree's. (YIPPEEE) But what gives? Same fan motor same assy just one less blade. I guess the blade pitch and spacing? Anyone with more experienc on this please let me know.
