Oil operating temp?

Oil operating temp?
I just took off the factory oil cooler and installed a plate for a real oil cooler and was wondering the best operating temp for the oil. Right now a have a temp sensor installed and the hose looped around with out a cooler just to see what the temp is before I install the cooler. It will run around 180 and up to 210 when im doing 70 mph or so. Havent driven it in hot weather or long enought to see if it gets hotter. THANKS
