89 GTA weird overheating

Hi guys this is my first post and ive been reading up but havent seen my senario. My car has a 305 TPI with no a/c or t-stat and every time i crank the car its fine around 180 but as soon as i start to drive it jumps to 240+ and cools down when stopped back to 200. the air dam looks to be ok ive never seen one to tell if its bad also new rad and water pump. Any ideas would be greatly appreciated.

Put a t-stat in it. Without one the radiator can't effectively cool the water as its always moving and can't stop to be cooled.
