Close to overheating, new fan switch sensor?

Hey guys, LG4 305, just installed new carb, headers, 3inch cat back no cat. When installing the headers, i accidently snapped off the coolant temp sensor that controls the fan (pass side head inbetween #8 and #6), no big deal. Bought a new one, installed it, hooked it back up. Connection feels solid, should work fine. Started the car, burped the system. Car climbs to 235-240 no sign of the fan coming on, so i turned her off. I only drive it short distances anyways, so it wasnt a big deal. Drove it to and from work for a week or two. Today i burp the system again to make sure all is well. She still climbs at idle/slow speeds up to 235-240 no sign of the fan turning on. During the header install i removed my AC Compressor since it was seized and the smog pump. Anyone have ideas on why the fan isnt kicking on? =/

Thanks

Stock fan switch temperature is 238° turn on.

AC Delco D1855B (or equivalent) fan switch. 210-215°F on.
