Engine: 355 TPI FINALLY

how hot is too hot

I just swaped from a 305TBI to a 355 TPI
temp is at about 200 when I turn the secondary fan on..
I get a little nervous when I see 220

So what is to hot for these cars..I removed all the A/c componants

well GM typically installs a 190 degree thermostat and a 220-230 fan kick on threshold... however, you say you removed your A/C... I'm not sure you may want to do some research on proper way of deleting your A/C both physically as well as electronically because I think your A/C may play part in how your first fan cycles... the majority of members here on TGO aren't using stock temperature control parameters... I myself am running a direct fan and a 180 degree stat... You will be surprised at the performance gains you will see...

In addition to the above, due to the fact you removed the condenser, you have room for a thicker radiator.

You’ll be able to be koooool at the equator.
