How many temp sensors are there and where are they?

Hello, I'm close to reviving my 86' camaro (quadra jet carburetor) and I wanna make sure my temp sensors are working.
How many temp sensors am I supposed to have and, what does each one do and where should I look for them?
I can see one on the thermostat housing. There's maybe even another one there right next to it, but it's disconnected. However the gauge works and the fans switch on.

That is the only temperature sensor. Should have a black and a yellow wire.

Are you sure? Isn't there at least one for the gauge and one for the ecm?

one is on front on the block (black and yellow wires)ecm,one on the driver side of the engine for the gauge(single wire)and also one more on the pasenger side of the block a single wire for the secondary fan if equiped

Correct (but the side ones are in the heads not the block if we're splitting hairs :-P )

Thank you, but do you know what the one just next to the ecm temp sensor is for? EGR maybe?

Yes, a sensor.

That is a temperature gauge sending unit, not a sensor.

That is the temperature fan switch, also, not a sensor.

It's been so long since I've had my '84 but, iirc, that is a temperature controlled vacuum switch for the EFE valve on you passenger side exhaust manifold. It's a fairly useless feature and best left unhooked (I'm not even sure it's useful in CA).
