Dilema, which temp rating thermostat to choose?

I just ordered from Ledfoot racing a fan shroud and a 16" fan with their relay kit. The temp switch comes on at 185* and off at 170*. I have been told the fan should come on 10* above the thermostat opening, however I can only choose either a 160* or 170*, which way should I go?

you will have to use a 160 with that sensor..... kinda on the cool side... I would run a 180 and get a new switch.

Unfortunately that's the switch it comes with. I guess I could always just buy another one that comes on at 195* and go with a 180* thermostat?
