Stock PROM with low-temp thermostat

Are there any problems with running a stock PROM with a low-temp thermostat?

The previous owner of my vehicle put in a Hypertech chip and replaced the thermostat (unknown temp). I want to ditch the chip for now and go back to stock, but want to make sure it's not going to have ill-effects.

(This is only for the short-term, as I'll be swapping engines in May.)
