Aftermarket Chip, how do you know?

How can you tell if you have an aftermarket chip? Do they piggyback or do they replace the stock one? I have a new to me Camaro and am wondering if they previous owner did this since the ECM was hanging out from the dash when I got it.

I realize a custom program would be on the original chip or similar and I would not be able to tell.
