With regards to burning a chip, what basic areas are included? For example the speed limiter. I have a '89 Caprice LO3 and I have added true dual exhaust on a single exhaust system, a 160 degree thermostat, and a K&N filter. Would it be worth getting a chip for these areas? If so, what would it change? Thanks,
Adam

When one "burns a chip" that 'chip' replaces any and all instructions the ecm uses.
Now, usually, you would copy the settings over from your old chip to the new, and only adjust what parameters needed adjusting. . . and by the look of it, you havent done that much that your setup should require a custom PROM.

before you start thinking you need a custom prom i'd say get winALDL and a cable and do some datalogging. Prove to yourself you need it.
Slightly modded of the shelf chips start around 50 bucks and go all the way up to a completely custom chip which goes for 350 . . .
