Someone please tell me how a MAF running the stock code can respond in any manner approaching this, I'd really like to hear how it's done.

If your using a real loose converter, and flashing past needing any real low end, that's fine and well, for anything approaching being really sweet to drive on the street, you need to be able to have the dips and vallies.

It's all those little *off* spots in the tables, that make this buggy so much fun to drive.
