I'm almost done but I need alittle advice. My engine specs are below but my question is... do I absolutely need to add a program chip to run my engine. Is there any harm in running on a stock prom and how much estimated HP/TQ is lost if I stay on the stock prom.

350 TPI 5.7
1987 MAF
Aftermarket Ported and polished heads 64cc (2.02/1.60)
Forged Pistons 9.72:1
ZZ4 Camshaft
24 LB Injectors
Adjustable fuel pressure regulator
Hugger Headers

EGR, AIR and AC ect... are deleted in the wiring. I may trip a few codes but I just want to hear it run.

sure it will run. mine did day one of mods. got me home from my buddies shop 25 miles. barely run. tripped a lean code! died a lot. terrible throttle response. so I just parked it till i had the equiptment to tune. but you are MAF and I am not so you will be better. I would suggest you order a temporary chip from tpichips.com until you start tuning it yourself.

MAF cars can measure the airflow changes due to modifications very well. Generally, any tweaks are to the MAF Scalar Tables, and they tend to be relatively minor.

Injector/pressure changes WILL require a prom change or you'll run too rich. As well as deleting the EGR, AIR etc will require an appropriate change in the prom.
