How to tell if both fans are working?

My question is how to make sure if both fans are working?
I put a new engine in my Z around xmas. The only changes were AFR 190 heads, and a cam jsut a little bit larger than stock...208/222 on 112lca. and compression is about the same (9.3/1). I think the only real change is that i took the header wrap off my headers and I had considered that this could be causing my temps to get so hot?
When I am in stop and go traffic or if sitting still, my car gets really hot? I have both fans comming on around180deg and stay on until they cool just below that. I have always run a 160 fail safe thermostat and do not know why I am running so hot? Both upper and lower radiator hoses are hot when warmmed up. The car cools down when on the freeway but MAN! I have no idea wut's up? can anyone help? Also, how can i check to see if both fans are working?

When I jump pins a +b on the aldl, the fan on the drivers side turns on but not the passengers side.

This is all assumed from the info you gave...
I'm guessing you have a TPI which leads to you having dual fans. You dropped in a new motor & the PROM is still OEM. Based on that, the OEM temp for the primary fan is roughly 220º (or higher), the 2ndary fan which is generally not ECM controlled in the same manner as the primary, will kick on at a goosebumply (yea,, I'm sure it's not a word...) cold... 238º. Other than that, they are called to operate by turning on the A/C.

To see if the 2ndary fan is operating, unplug the fan switch from the pass side head (between 6 & 8 cyls) & ground it with the key in the 'run' position, this will ground the relay & cause the fan to run. If it doesn't, you've found a new problem.

There are many ways to combat this problem and, if you check out the new temp (hopefully permanent) forum for this problem, you might find a suitable answer as well.

Thank you for the valuable info! Yes, i have the TPI with dual fans. I have been burning my own proms and Tuner Cat has two fans for the constant table to adjust. I have both set to turn on at aporx 180deg and off at 175deg. I am not sure if the second fan is activated by the ecm or not? Anyway, I'm going to try and ground it to see if the second fan is working or not. I did post this on the cooling it down board, no responces yet. Thank you again!!!!!

No thanks needed bud... just trying to be helpful.
As far as I know (which isn't very far at times lol), only the primary fan is ECM controlled as far as temp (aside from the A/C stuff) is concerned (PROM set).
The 2ndary fan is only prompted to kick on (referring to later years) by the fan switch, the A/C line press. switch or, A/C fan request by the ECM when the A/C it turned on.
