Car: 87 camaro sport coupe convertible
Engine: 305
Transmission: auto
voltage level at idle (750 RPM)

I have an 87 Camaro convertible with a 305 automatic.

Looking at the Volt meter (in the dash), I get 13 V when I am at 1000 RPM or above, but it drops down to battery voltage when at idle.

Is this normal ?

Not unusual, but it's really best to check with a meter at the battery. The stock dash volt meters are not at all accurate. Check it right, you may not be falling all the way down to battery voltage.

No I have stock pulleys.

But I also have a rough idle, which I was suspecting could be related to the low voltage. But maybe it is the rough idle that is causing the low voltage.
