Removing harness

If i were to removed the majority of the engine harness except for sensors ang ground wires and ran an non emissions vaccum controled car, would the guages still work? and would i be able to use the turn key ignition?

How Much of the wiring can i remove if any?

its been a while but it think i remember taking out the whole harness that goes into the pass side with the computer. the fuel and batt. gauges were the only things that worked. but i never tried hooking up the other stock gauges to the new engine. i got aftermarket tach, oil, and temp.

what carb and ign setup do you have. i guess i assumed they where not stock.
