HELP Needed with temp gauge issue after removing AIR

HELP Needed with temp gauge issue after removing AIR
Ok so last weekend me and my brother ditched my AIR system under the hood... durring which the temperature switch broke, meaning the little connector broke off. Now since that happened my temp gauge will go nuts when I would give it gas, weather the car was moving or not.
Now I bought and replaced both the broken switch in the head, and the sensor in the intake. The switch in the head was a different design, so I had to splice a connector on there compared to the temp probe looking thing that was on there.
Even with both new switches, my gauge still does the same jumping deal.
and the whole time, it jumps so crazy that the needle gets stuck on the black bezel (under the lens)
I hope this is enough information to figure out whats going on here... but anything is appreciated, thanks
