Removing Air bag wiring and all components?

Removing Air bag wiring and all components?
I have my current project stripped down to the basically nothing except wiring and a few things here and there. I was wondering is it possible to remove the airbag computer, all wiring, all sensors/impact sensors ect and still have the stock ECM control the gauges without issues or is this a nightmare on its own? If its possible should i try to get the harness and components out in serviceable condition or just cut it out and make it faster?
I'm thinking this for a time attack car which is basically stripped anyways and thinking of ways to cut down a few more lbs.

Yes once the airbag is removed you can remove all the other components due to the fact those components, and the ECM, are independent.
