AC harness Wiring Help

Newb here with a not so newb question. I have an 86 iroc, and the previous owner removed the ac system, evap, blower, condenser, compressor, and even chopped the harness at the firewall. I have acquired everything I need to get started on fixing it all to put ac back in the car. I have a few questions on the harness.

what do these go to?

also, when putting the fan on high, it shuts off, Is this a bad switch or something else wrong?

I'm pretty sure my car was a factory carb car, and my next question is how many vacuum lines should be coming out of the firewall with the harness, The new harness has 2 smaller ones, where as the old one that is chopped only has one bigger one. I hooked up the bigger one to the carb and everything seems to work ok inside the car. Thanks for any help guys...
