You're proposing the right way to go about a V6->V8 swap. Put the two next to each other in the garage, open the hoods, start taking pictures. Label EVERYTHING from both cars as you disconnect, don't cut anything. Take more pictures as you go. As a part comes off the V6 car, put it in the back of the V8 car and vice versa. Then, start putting the V8 stuff into the V6 car.
A couple of challenges will be:
Front engine mounts. Getting to those nuts inside the crossmember is a challenge.
Front springs. If you remove the a-arm from the crossmember, you can get to the engine mount nuts at the same time. Only problem is you can't just jack the a-arm up, because the weight of the engine won't be there, and the body itself isn't heavy enough to compress the springs.
An alternative is to remove the entire front crossmember - that'll get you the mounts and springs at the same time. I didn't do that, wish I would have.
Don't forget the engine harnesses, ECM, tach, and tranny are all different between V6 & V8. The harness can basically be removed as one piece.
