So your keeping it Carburated? If so, Find a nice NON- computer controlled HEI Distributor, And a nice NON Computer Carburator and install your motor. Then you wont need to worry about Wiring harness...Just Alternator Wire, Ignition Wire Etc...

the 350 i'm gettin is a rebuilt motor from http://rebuiltengines.com. its a 83 350 out of a police package caprice. believe they said it was 385hp and 400ftlbs torque.
and yeah keepin it carb'd. simple but effective. plus later down the road i may install a blower on it. but for now its gonna be a N2o monster.
thanx for the help man

Yeah for the setup your talkin about you can ditch all those wires goin to the carb and alot of the other stuff as well...For my swap I am going simple as possible. So I switched to mechanical guages. The temp comes off the thermostat housing, The Oil pressure off the back of the block and Amp comes right from the alternator wire...You seem to be set, Good luck, Keep us posted
