there is no way anyone can give you an accurate estimate because of different intended use and performance goals. figure out what you think you need and then double the cost and you'd be about right. ive got maybe 7000 into the car not including the purchase, 90% of the work done myself. you might be more or less depending on deals you can get what you can and cant do yourself. the other thing is a can beat the hack out of my car, you might be willing to have some restrictions to save money.
as far as carb or FI, again there has been alot of discussion about it. my preference for myself(rarely drive the car mostly to the track and back) is a 750 mech secendary 4150 Holley. its easily tunable and cost is much less than i would have to pay for a FI setup that would give me comparable performance.

Just to add to this topic; check out five7kids sticky on v6 to v8 swaps, it will give you a good idea of what you'll need. From there, you can decide what sort of engine you want performance wise, whether it be crate or a rebuilt donor or junkyard engine. Then you'll have to think what tranny you want. Next there is the problem of going carb or efi.All these things will, of course, have a direct affect on your wallet.

BTW, that's a sweet looking ride, how long have you had it?
